Adequate thermometer, sanitizer, and test kit. Employee health policies are up to date on all staff. Notes: 1. Discussed proposed additions to the menu. Talking about purchasing a sandwich MUT cooler to add sandwiches and flatbread pizzas. Looking to use all ready-to-eat ingredients. 2. Discussed the benefits of using time as a public health control on creamer/half+half. Suggest setting a timer for every two hours and then it won't matter if the container is left out at room temperature. 3. Plan to replace the seals in the display case soon since it has a lot of condensation build-up. They are already on-site and will be installed during a slow period. 4. Adequate thermometer, 3-vat setup, quaternary ammonia sanitizer, and test kit. Reviewed employee health. Provided FDA 1-B form on employee health and reviewed it with the owner. Notes: 1. If facility ends up wanting to leave half+half out at room temperature for customers to use it will have to establish and mark the use of time as a public health control. Stickers with a time written on them or the use of an actual timer would suffice. 2. Bagels and muffins are brought in fresh every other day. Any product that is considered ready-to-eat and is kept for over 24 hours must be marked with either the preparation or discard date. 3. Make sure the hand sink is utilized for hand washing only and no other purpose. Any dumping/rinsing should be done at the 3-vat sink when it is not set up for use. 4. Sanitizer dispenser present at the 3-vat sink and another in a closet for filling spray bottles. When wiping surfaces down make sure use a fresh rag each time, or otherwise keep the cloth stored in sanitizer when not in use. 5. Currently serving hot/cold coffee, muffins, bagels, and fruit/fruit juice smoothies. Prepackaged breakfast sandwiches are also on hand, and can be heated to order. Delivered health permit.
