Today’s inspection was to conduct a routine inspection. Thank you for accompanying me through the inspection as your participation allows me to clarify information and identify areas where your processes may need further attention or assessment.
During the inspection of this establishment it was noted that management WAS NOT aware of the Food Code provision that employees are required to report certain symptoms or diagnosed illnesses to the person in charge. Also, the person in charge was not able to name the Big Five Foodborne illness which are required to be reported to the Health Department. However, information was provided to the CFM.
Also, it was noted that your CFM card is about to expire. I have left you with contact information for the testing facilities.
Sanitizer for 3-vat sink was not in use during ispection , Wet wiping cloth bucket was tested using facility test strips 50 ppm.
During inspection observed that the current permit is posted in a place where customers can view. Also, per the CFM there have been no changes to the menu since the last inspection. Thank you for cleaning under fryers and along walls since last inspection.

The purpose of the visit is a follow-up to a complaint received by our office on March 19, 2007 in which the complainant reportedly observed a mouse running under a trash can at the front of the facility. During inspection did not observed a mouse. Also, during inspection of facilities, under fryers, along floors, under sinks and coolers and water heater and trash cans, did not observe evidence of mice. The complaint is therfore NOT CONFIRMED. However, the above noted violations were observed. In addition, observed pooled water under a reach in cooler unit near the cook line. Per CFM, the drain pan is full and in need of draining. Empty the pan to prevent pooling of water at this can attract pests. Continue to work on the above violations until they are corrected or within 90 days. Comments:
This is a complaint inspection regarding an uncovered dumpster with trash overflowing.
The owner confirmed he has his own dumpster which is picked up weekly. He does not have a separate dumpster for boxes; therefore, break the boxes down before putting them in the dumpster to provide more room for food trash. He got inside the dumpster and pushed the boxes down and closed the lids.
