  • Critical: Cooling* (corrected on site)
    Observation: Cooked onions from yesterday noted not being adequately cooled to prevent the growth of harmful bacteria.
    Correction: Cool potentially hazardous foods from 135°F to 70°F within 2 hours and within a total of 6 hours from 135°F to 41°F. A longer time for cooling allows an ideal situation for bacterial growth. This has been shown to be the major contributing factor in many foodborne illnesses. Discard onions.
  • Critical: Backflow Prevention, Air Gap* (corrected on site) (repeated violation)
    Observation: An air gap between the water supply outlet and the flood rim level of the mop sink is not observed. If this direct connection exists between the drinking water system and a source of contaminated water during times of negative pressure, contaminated water may be drawn into and foul the entire system. The mop sink has a Y connection that is pressurized with an AVB and a hose attached hanging in the flood rim basin. The AVB is not adequate for pressure therefore creating a need for an air gap with regards to the hose.
    Correction: Provide an air gap with a diameter that is at least twice the diameter of the water supply inlet and not less that 1 inch for proper backflow prevention by the air gap. Also, replace the AVB with the appropriate Backflow for pressure.
  • Floors, Walls, and Ceilings - Cleanability (repeated violation)
    Observation: Ceiling in dry storage is not smooth and easily cleanable.
    Correction: Repair or replace ceiling to make it smooth and easily cleanable.

Food & Beverage Concessions Storage area was added after permit issued. In addition, a large beverage walk in was added.
  • Critical: Eating, Drinking, or Using Tobacco* (corrected on site)
    Observation: The food worker is drinking from an uncovered container in the food preparation area.
    Correction: Employees may drink from a closed beverage container if the container is handled to prevent contamination of (1) The employee's hands, (2) The container, and (3) Exposed food, clean equipment, utensils, and linens, and unwrapped single-service and single-use articles.
  • Hair Restraints - Effectiveness
    Observation: Employees observed working in the food service area without proper hair restraints.
    Correction: Ensure all employees wear hair restraints such as hats, hair coverings or nets, beard restraints, and clothing that covers body hair, that are designed and worn to effectively keep their hair from contacting exposed food, clean equipment, utensils and linens, and unwrapped single-service and single-use articles. This section does not apply to food employees such as counter staff who only serve beverages and wrapped or packaged foods, hostesses, and wait staff if they present a minimal risk of contaminating exposed food

    Observation: Unlabeled food container (sugar).
    Correction: Label working containers with the common name of its contents. Consumers may be allergic to certain foods or ingredients. The mistaken use of an ingredient when the consumer has requested that it not be used may result in severe medical consequences. Liquid foods and granular foods may resemble cleaning compounds. The mistaken use of food from an unlabeled container could result in chemical poisoning.

    Observation: Food stored under sewer lines in the F & B Concession Storage Room.
    Correction: Relocate food storage to an approved area or shield the sewer lines to intercept potential drips.
  • Equipment - Good Repair and Proper Adjustment
    Observation: Soap dispenser in Bar #4 and Parsons Lounge not in proper working order.
    Correction: Repair the soap dispensers to restore a state of condition that allows for proper operation, accuracy, functioning, maintenance, and cleanability per Part IV, Article 1 and 2 of this chapter. If unable to repair the soap dispensers. or replace it with one that meets the specifications of Part IV, Article 1 and 2 of this chapter.
  • Equipment, Utensils, Linens, and Single-Service and Single-Use Articles
    Observation: Single service items observed stored on the floor.
    Correction: Store single service items in its original protective packaging 6" off floor.

    Observation: Plumbing leak behind the handsink in the Farrell lounge.
    Correction: Repair and maintain all plumbing components and fixtures.

    Observation: Wall or wall covering in F & B Concession Storage is not smooth and easily cleanable.

    Observation: A sign or poster that notifies food employees to wash their hands is not provided at all lavatories used by food employees (Farrell Lounge).

  • Physical Facilities in Good Repair
    Observation: Walls observed with holes in them from Operations room to F & B Concession Storage and holes observed in walls and ceiling of Main Kitchen Dry Storage Room - these areas are not maintained in good repair
    Correction: Maintain physical facilities in good repair. Poor repair and maintenance compromises the functionality of the physical facilities.
  • Mops - Drying Mops
    Observation: Mops not hung up to air dry.
    Correction: Wet use maintenance items such as mops must be hung in a position that allows them to air dry so they are not allowed to grow contamination which can then be spread through the establishment at the next use.
  • Pests - Removing Dead or Trapped Birds - Insects, Rodents, and other Pests
    Observation: Dead or trapped large roaches were found in the control device located in the F & B concession storage room.
    Correction: Remove dead or trapped birds, insects, rodents, and other pests from control devices and the premises at a frequency that prevents their accumulation, decomposition, or the attraction of pests.
