Complaint for Taco Bell. Park Place comprised of Nao & Zen, Chick Fil A, Taco Bell . No employees sick on 9/2,9/3,9/4. Hot holding beef temperatures in compliance. Cold holding products on line stacked above fill line. PIC advised to only fill product to fill line and to adjust unit to ensure temperatures are maintained. Employee health reviewed with PIC.

    Observation: The strawberries covered in a fuzzy mold like substance in the walk in are unsound or adulterated.
    Correction: Ensure food is safe and unadulterated. Discard.

    Observation: Milk wash (Chick fil A), eggs, pork, chicken, tuna, sweet potato chicken (Nao & Zen) cold holding at improper temperatures.
    Correction: Cold hold potentially hazardous food at 41°F or below to inhibit the growth of harmful bacteria. Ice the product and\or relocated the product.

    Observation: Surfaces of the interior of the ice machine was in contact with non-potentially hazardous food items that were observed soiled with accumulations of grime and debris.
    Correction: Clean the surface of the interior of the ice machine at any time when contamination may have occurred, at least every 24 hours, before restocking the consumer self-service equipment/utensils, or per manufacturer specifications.

    Observation: Soap was not provided at the hand washing lavatory in the warewashing area.
    Correction: Hand soap must be provided at all hand washing lavatories to encourage proper hand washing. Hand cleanser must always be present to aid in reducing microorganisms and particulate matter found on hands.

  • Food Storage Containers - Identified with Common Name of Food
    Observation: Bins containing rice, pasta and cinnamon sugar observed unlabeled.
    Correction: Label working containers with the common name of its contents. Consumers may be allergic to certain foods or ingredients. The mistaken use of an ingredient when the consumer has requested that it not be used may result in severe medical consequences. Liquid foods and granular foods may resemble cleaning compounds. The mistaken use of food from an unlabeled container could result in chemical poisoning.
  • Temperature Measuring Devices (corrected on site)
    Observation: There was no temperature measuring device located in the Traulsen 2-door refrigerator at Chick-fil-A.
    Correction: Provide a temperature measuring device in all hot or cold holding equipment used to store potentially hazardous foods so that employees can routinely monitor the ambient air temperature.
  • Warewash Machines, Temperature Measuring Devices
    Observation: The temperature measuring device for the sanitizing tank of the newly installed warewashing machine is not operating.
    Correction: Provide a functioning temperature measuring device at the sanitizing compartment so employees can routinely monitor the water temperature.

    Observation: Several Lexan pans were found stacked while wet after cleaning and chemical sanitization.
    Correction: Items must be allowed to drain and air-dry before being stacked or stored to allow evaporation of chemical sanitizer and moisture that may encourage microbial growth.

    Observation: The cold water handle at the faucet fixture on the 3-compartment sink was observed missing.
    Correction: Replace cold water handle. Repair and maintain all plumbing components and fixtures.

    Observation: A sign or poster that notifies food employees to wash their hands is not provided at the employee handsink in the warewashing area.

    Observation: Holes/gaps in wall observed around water pipes beneath employee handsinks in both Chick-fil-A and Now & Zen prep. areas.
    One light fixture above the dishmachine was not working.
    The caulk lines sealing the following equipment were observed deteriorated/failing and in need of replacement:
    - at the right end of the 3-compartment sink adjacent to wall
    - behind the 2-compartment sink adjacent to wall

    Correction: Repair holes/gaps in wall surfaces. Restore light fixture to working order. Replace deteriorated caulk used to seal equipment to walls. Maintain physical facilities in good repair. Poor repair and maintenance compromises the functionality of the physical facilities.
