    Correction: Hand drying devices such as individual disposable paper towels, a continuous towel system that supplies the user with a clean towel or heated air hand drying device must be provided at all hand washing lavatories to encourage proper hand washing and avoid employees to drying their hands on their clothing or other unclean materials

    Observation: Working containers of bleach solution are not properly labeled.
    Correction: Working containers of toxic items are to be properly labeled with contents. Identification of these containers with the common name of the material helps prevent the dangerous misuse of the contents.

    Correction: Separate raw animal foods during storage, preparation, holding, and display from raw RTE food including other raw animal food such as fish for sushi or molluscan shellfish, or other raw RTE food such as vegetables, and cooked RTE food.

    Observation: The food contact surface of some dough trays contain cracks, chips, or pits that can not be easily cleaned.
    Correction: Discontinue the use of damaged trays. Provide a food contact surface that is smooth and easily cleanable, free of breaks, open seams, cracks, chips, pits, sharp internal angles, corners, and crevices to prevent build-up of food debris.

    Observation: Physical structure is not maintained in good repair. Ceiling in the back of kitchen needs to be repaired immediately. The floor and hand washing sink are also in need of repair.
    Correction: Maintain physical facilities in good repair. Poor repair and maintenance compromises the functionality of the physical facilities. Talk to landlord and get the roof fixed as soon as possible.
  • Critical: Sanitizer - Criteria/Chemicals for food contact* (corrected on site)
    Observation: Sanitizing Agent being applied to food contact surfaces does not meet the requirements of 40 CFR 180.940. Concentration was less than 50 ppm.
    Correction: Utilize only sanitizing agent that meet the requirements of 40 CFR 180.940 when applying to food contact surfaces. Do not add soap to bleach water, and make sure that the concentration is 50-100ppm.

    Correction: Ensure all employees wear hair restraints such as hats, hair coverings or nets, beard restraints, and clothing that covers body hair, that are designed and worn to effectively keep their hair from contacting exposed food, clean equipment, utensils and linens, and unwrapped single-service and single-use articles. This section does not apply to food employees such as counter staff who only serve beverages and wrapped or packaged foods, hostesses, and wait staff if they present a minimal risk of contaminating exposed food

    Observation: Observed accumulations of dust, dirt, food residue or other debris on the following nonfood-food contact surfaces: tables and shelves in kitchen are not clean and have cardboard on surfaces.

New freezer purchased to maintain proper temperatures on frozen foods. Discussed cooling of pizza sauce.
