Person in charge knowledgeable of food safety processes and correctly answered questions regarding cold holding temperatures, hot holding temperatures, employee health and proper sanitizer concentration levels. Employees were observed wearing and changing gloves and washing their hands when necessary. Excellent date marking system, uses mix of days or shift numbers for discard dates. Excellent hot holding, cold holding, and cook temperatures. Kitchen staff utilizing thermometers. Dishmachine took a few runs to hit proper sanitizing temperatures. Ensure that machine is run a few times (3-4) before running dishes through especially first thing in the morning. Monitor dish area clean area to ensure all dishes are clean and clear of any food residuals before storing.
Plumbing System Maintained in Good Repair Observation: Plumbing connections at the dish sink are leaking.
Correction: Plumbing systems and components shall be maintained in good repair.
Refuse - Maintaining Refuse Areas and Enclosures Observation: Refuse area outside the facility needs cleaning.
Correction: The refuse container storage area and grounds adjacent to the container are to be maintained clean and sanitary. Remove items not in use, boxes, concrete pad area needs cleaning (by discard oil container).
Hand Drying Provision (corrected on site) Observation: No disposable towels were provided at tthe disharea handsink.
Correction: Hand drying devices such as individual disposable paper towels, a continuous towel system that supplies the user with a clean towel or heated air hand drying device must be provided at all hand washing lavatories to encourage proper hand washing and avoid employees to drying their hands on their clothing or other unclean materials. Towels were provided.

Note: Observed good food and unit temperatures. Operator and the kitchen used gloves with RTE foods. The mechanical dish-machine was sanitizing @ 180 degrees F in the final rinse. The test-strip turned completely.
Critical: Equipment - Food Contact Surfaces, Nonfood Contact Surfaces, and Utensils* Observation: Observed build-up possible mold/mildew on potato peeler machine.
Correction: Operator corrected at the time of evaluation. Clean and sanitize these surfaces for food contact.
