Warewashing - Mechanical Warewashing Equipment, Hot Water Sanitization Temperatures (corrected on site) Observation: The water temperature in the manifold servicing the high temperature ware wash machine was below the minimum allowable level of 180ºF. The thermometer read <170ºF>.
Correction: Sanitize the dishes as they come out of the machine in the 3 compartment sink with a bleach solution until the machine can be fixed.

Discussed employee health policy with PIC. Reviewed temperature logs and pest control records. Have the middle make table serviced to maintain 41F or below at all times. Ensure dish machine rinse temperature meets 180F minimum. Maximum registering thermometer read 160F after being run through the dish machine.
Food Storage - Clean and Dry Location (corrected on site) Observation: Food stored on the floor or food stored less than 6" above the floor. Boxes of food stored on the floor in the walk in freezer.;Elevate food storage onto approved shelving with minimum 6" legs or casters.
Critical: Food - Potentially Hazardous Food - Cold Holding* (corrected on site) Observation: Sliced tomato, sliced ham cold holding at improper temperatures
Correction: Relocate food to a refrigeration unit that is capable of maintaining food storage at 41°F or below.
Floors, Walls, and Ceilings - Cleanability Observation: Floor or floor covering in dishwash area is not smooth and easily cleanable. Floor tiles area broken in the dishwash area.
Correction: Repair or replace floor or floor covering to make it smooth and easily cleanable. Correct in 30 days.

Correction: Discard the food and ensure that potentially hazardous foods for cold holding are maintained at 41°F or below to inhibit the growth of harmful bacteria.
Critical: Ready-to-Eat - Potentially Hazardous Food - Disposition* (corrected on site) Observation: The prepared ready-to-eat (RTE) pasta in the refrigeration unit was not discarded by the ""consume by"" date.
Correction: Discard the food at this time and ensure all prepared RTE food is served, sold or discarded by the ""consume by"" date. Some harmful bacteria continue to grow even at refrigeration temperatures so limiting the amount of time in storage limits the amount of growth allowed for these bacteria.
