Food Storage - Clean and Dry Location Observation: Food (including coffe, cookies) stored on the floor. Even if the food is in boxes, it needs to be at least 6" above floor. ;Elevate food storage onto approved shelving with minimum 6" legs or casters. If there is not enough shelving available, more can be brought in. Please correct within 30 days.

Critical: Food - Potentially Hazardous Food - Cold Holding* (corrected on site) Observation: Quiches are cold holding at improper temperatures.
Correction: Discard the food and ensure that potentially hazardous foods for cold holding are maintained at 41°F or below to inhibit the growth of harmful bacteria. Recommend keeping temperature log of cold holding TCS foods.
Cooling, Heating, and Holding Capacities Observation: Display cooler is not currently meeting the cold holding demands of the establishment.
Correction: Adjust, repair or replace display cooler that holds cold food. In the meantime, do not store TCS foods in this cooler. Improper food storage temperatures are a major contributing factor to foodborne illness. Please correct within ten days.
