Handwashing, and dishwashing, facilities were being maintained properly. No food temperature problems were observed.
- Single-Service and Single-Use Articles, Use Limitation (corrected on site)
Observation: There was shredded cheese being stored in a white plastic bucket, in one of the refrigerators. The lid of the bucket had an impregnated commercial label saying "chicken BBQ." These buckets and lids are intended to be "for a single use only" by the food supplier.
Correction: We do not allow the re-use of these white plastic buckets, or lids, with commercial labelling, except for the storage of food that originally came in the bucket. These white plastic buckets and lids do not stand up to repeated dishwashing. Switch to tupperware, or some other smooth, easily cleanable, more durable type of storage container for storage of foods. This violation was immediately corrected by the establishment management.

Observation: An employee was wearing a ring on her fingers with a stone in it, while working with food.
Correction: The only ring that may be worn on the fingers, while working with food, is one plain wedding band (no stones, or rough surfaces).
- Hair Restraints - Effectiveness
Observation: An employee was not wearing a hair covering, that we require while working with food
Correction: We require all employees working with food wear a hat, an open visor, a scarf, a hair net, or some other type of hair covering that we have approved..
- Critical: Hands - Preventing Contamination from Hands*
Observation: An employee was observed bare hand contacting a roll, and bare hand contacting a cooked hamburger.
Correction: We do not allow bare hand contact with cooked, or any ready-to-eat foods. Use disposable gloves, tongs, and sponns. This violation was immediately corrected by the establishment management.
- Equipment and Utensils - Durability (corrected on site)
Observation: There were two metal banded basting brushes in the kitchen.
Correction: We do not allow metal banded brushes in food establishment kitchens. The areas between the bands and the brushes themselves are not easily cleanable at the bacterial level. And the metal bands may rust, creating additional non-cleanable surfaces. The metal-banded brushes were immediately removed from the kitchen area by the establishment management. This corrected the violation. Replace using plastic banded brushes, or brushes with no bands.
