NOTE: Walk-in cooler and walk-in freezer were neat, well lit, and well organized with raw foods below ready-to-eat foods. Good job thawing in walk-in cooler. Great job labeling spray bottles to identify their contents. Please ensure ONLY certified pesticide applicators put chemicals down used to prevent or control pests/insects at the food establishment.
  • Critical: Hands - When to Wash* (corrected on site)
    Observation: Food employees failed to wash their hands before putting on gloves. One employee ran the cash register and handled money and then put on gloves.
    Correction: Instruct and encourage food employees to clean their hands and exposed portions of their arms immediately before engaging in food preparation, before putting on gloves, before putting away clean/sanitized dishware/utensils ,and as often as necessary to remove soil & contamination and to prevent cross contamination when changing task. Suggested only storing single-use gloves at the hand wash sink to encourage proper handwashing.
  • Critical: Equipment - Food Contact Surfaces, Nonfood Contact Surfaces, and Utensils* (corrected on site)
    Observation: An employee was observed using a utensil to handle raw and/or partially cooked eggs and raw meat products and then used the same utensils to remove cooked foods from the grill.
    Correction: Clean and sanitize these utensils between working with raw and ready-to-eat foods OR have a utensils designated for touching raw meat and then a different utensil for removing the fully cooked meat from the grill. Fully cooked items are likely being cross-contaminated with raw animal products which could cause illness. * Additional utensils are being ordered *

Good job organizing walk-in cooler with raw food such as meat and eggs below / away from ready-to-eat food such as sliced tomatoes. Good job having visible thermometers in the front part of all cold holding units. Reviewed dishwashing procedures with Quat sanitizer being used by store stating that dishes need a 60 second contact time. Reminder to always wash hands prior to putting away clean, sanitized dishes and utensils. Left ServSafe training schedule.
