Mark the name and "consume by" date on the container of RTE foods at the time of preparation if the food is to be held for more than 24 hours. If the food is held at 41F or below the food shall be served or sold within 7 calendar days. Some harmful bacteria continue to grow even at refrigeration temperatures so limiting the amount of time in storage limits the amount of growth allowed for these bacteria.

0820 A 2 - Critical Cold holding at improper temperatures. Tuna and cottage cheese at 44F. Cold hold potentially hazardous food at 41F or below to inhibit the growth of harmful bacteria. Check unit and repair so that it is capable of maintaining phfs at 41F or below. Also make sure foods are below 41F before placing on unit and do not overfill containers.
1770 C - Observed accumulations of dust, dirt, food residue or other debris on the following nonfood-food contact surfaces: doorways of reach in unit and floor fan. Maintain nonfood-contact surfaces of equipment clean.
3170 - Ceiling in grill area is not maintained in good repair-paint peeling. Maintain physical facilities in good repair. Poor repair and maintenance compromises the functionality of the physical facilities.
3380 - Corrected During InspectionCritical Chlorine being applied to food contact surfaces does not meet the requirements of 21 CFR 178.1010. Wiping cloth concentration below 50 ppm. Utilize only chlorine that meet the requirements of 21 CFR 178.1010 when applying to food contact surfaces. Keep concentration at 50-100 ppm-1 tbsp bleach to 1 gallon of water.

3180 - Repeat Floor vent and ceiling vents noted in need of cleaning. All floors, walls, and ceilings must be cleaned as often as necessary to keep them clean. Cleaning of the physical facilities is an important measure in ensuring the protection and sanitary preparation of food. A regular cleaning schedule should be established and followed to maintain the facility in a clean and sanitary manner.
