During the inspection, employee health, hand washing, and no bare hand contact with ready to eat foods was discussed. Th 2013 Food Code requirements were also reviewed. Permit issued.

    Observation: The walk in threshold is not firmly attached to the floor.
    Correction: Repair/replace the threshold to restore a state of condition that allows for proper operation, accuracy, functioning, maintenance, and cleanability per Part IV, Article 1 and 2 of this chapter.
  • Equipment - Good Repair and Proper Adjustment
    Observation: The Delfield reach in gaskets are not firmly attaching when closed.
    Correction: Repair or replace the door gasket in accordance with the manufacturer's specifications.
  • Warewashing Machines, Manufacturers' Operating Instructions
    Observation: The mechanical warewashing machine was not operating in accordance with the manufacturer's specifications.
    Correction: Operate the warewashing machine per affixed data plate specifications to ensure that equipment and utensils are properly cleaned and sanitized. The unit is currently not being used.

Note: All TCS foods were relocated from warm refrigerators. Salads for the cold bar will be used one tray at a time and any left over salads will be discarded.     Observation: The ceiling tiles and the light shields noted in need of cleaning.
    Correction: All floors, walls, and ceilings must be cleaned as often as necessary to keep them clean. Cleaning of the physical facilities is an important measure in ensuring the protection and sanitary preparation of food. A regular cleaning schedule should be established and followed to maintain the facility in a clean and sanitary manner.
