| To obtain a health permit, the following must be completed and or approved: 1. Obtain a copy of the CO. 2. Obtain Food Handler's Cards for all potential food workers. 3. Obtain an active Certified Food Manager (this person will have active managerial control). 4. Ensure the fire extinguisher and suppression system is up to date. 4. Clean and organize all the storage space, ensuring all heavy equipment and mop buckets are relocated. 5. Relocate employee food to have space for food service operation. 6. Activate unused freezer. 7. Organize can goods - first in first out, removing out of date cans 8. Remove kitchen curtains. 9. Remove the carpet in the rest rooms. 10. Install hand washing signs at all hand sinks. 11. Ensure trash can have lids. 12. Remove card board boxes and bags. 13. Obtain a cooking thermometer. 14. Obtain test strips. 15.
