Observation: The following food item(s) were observed cold holding at improper temperatures using a calibrated food temperature measuring device: 2 YOGURTS 42F, 42F @ #3 & CREAM CHEESE 44F & CHEESE 42F @ #4
Correction: Potentially hazardous foods (time/temperature conrol for safety food) shall be held cold at a temperature of 41°F or below. CFM. discovered problem yesterday, had refigerator serviced yesterday and will call for further service. PHF foods out of temperature were discarded. Unit A had no other PHF foods and the yogurts came from unit #4.

Observation: Unauthorized personnel, such as children or customers, were observed present in the food preparation, food storage, or warewashing areas. WOMAN OBSERVED GETTING ICE OUT OF ICEMAKER, WHO CAME OUT OF SEATING AREA.
Correction: Persons unnecessary to the food establishment operation are not allowed in the food preparation, food storage, or ware washing areas of the commercial establishment. Only approved tours or brief visits may be authorized by the Person in Charge or certified food manager is steps are taken to ensure that exposed food, clean equipment/utensils, clean linens, and single service items are protected from contamination. - Wiping Cloths/Use Limitation/Wet Towel Storage (corrected on site)
Observation: Wet wiping cloths used for wiping counters and other equipment surfaces were observed stored in buckets. THREE OF 4 BUCKETS HAD ZERO SANITIZER AND ONE HAD ~50 PPM SANITIZER.
Correction: Wet wiping cloths are to be used for wiping counters and other equipment surfaces and are to be held in a chemical sanitizer solution at the appropriate concentration between uses.
