Overall excellent sanitation seen. Observed very good handwashing, good overall food temperatures, good storage, and good labeling. Sanitizer in place at 200 ppm Cl and used. Good thawing with chicken filets thawing under cold running water x 30 minutes checked at 63 F. Noted: Facility cooling leftovers. Some cooling issues seen and corrected during inspection. Reviewed, facility with one very good commercial refrigerator and on walk in that is borderline for food storage and generally used for fresh produce. Discussed, if leftovers are kept, cool using dividing food, ice and initial cooling in walk in refrigerator to avoid hot / warm foods in reach in refrigerator. Good employee health knowledge. All food temperatures taken with EHS thermocouple calibrated at 32.1 F. Good practices checking equipment temperatures and checking final cook temperatures with facility food thermometer, but not food temps in cold holding or for cooling. Discussed, check food temps for both.

Discussed, ensure equipment handles and knobs are cleaned and sanitized with other food contact surfaces. Noted walk in refrigerator fully stocked including with time and temperature controlled foods. Suggest moving some items to the 2 door reach in refrigerator.

Kitchen inspection done before camp begins for season. No food present yet, and all dry stores removed to replace. New 2 door commercial reach in refrigerator in place. New stainless steel counter tops installed. Good refrigerator temperatures. Bleach not present now, but will be used. Test kits in place. First camp begins in June.
