NOTE: Great job date marking foods. Great job labeling spray bottles to identify their contents. Good job having thermometers inside all cold holding units as well as available for staff to monitor cooking and cooling food temperatures. Good job with dishwasher washing hands between handling dirty dishes and putting away clean, sanitized dishes to air dry. Good job storing raw meat and in-shell eggs below ready-to-eat food in coolers to help prevent cross-contamination. Discussed cooling rapidly, cooling uncovered, monitoring temperature of cooling foods, and having training on cooling methods with staff throughout the year.. Reminder for all employee beverages to have both a lid & straw and be handled in a manner to prevent contamination. Facility keeps some equipment and food temperatures.
