Ice machine top is taped and inside ceiling is rusting. None are corrosion resistant, nonabsorbent, and/or smooth.

Many improvements had been made since the last evaluation. The kitchen walls and ceiling had been painted, all shelves painted and raised at least 6" off the floor, lighting in kitchen upgrades, quaternary ammonia being used at proper concentration of 200ppm, unnecessary items had been removed.

Generally, facility is clean and well organized. Staff is knowledgeable about food safety. Chlorine sanitizing dishwasher working well--sanitizer at 100ppm. Metal stem thermometer available. Soap/towels at all handsinks. Make sure foods prepared in high volume are cooled down to 70oF in less than 2 hours and from 70 down to 41oF or below in less than 4 hours. Reviewed employee health policy.

The purpose of this visit was to followup on the critical violations noted on the inspection report dated 10-22-03. (CORRECTED: NO BARE HANDS WERE USED TO HANDLE READY-TO-EAT FOODS.)
(CORRECTED: ON 11-24-03, THE OWNER NOTIFIED ME BY PHONE THAT THE STRENGTH OF THE QUATERNARY AMMONIA SOLUTION WAS AT 200 PPM.)
