Discussed Employee Health, observed Form 1B. Recommend having all food employees not only read, but also sign form 1B. Discussed cleaning/sanitizing equipment utensils, and reheating procedures. Last fire service November 2014. Terminex is LPCO. Recommend wearing hair restraint during all food preparation. Recommend keeping thermometer in toddler room RIC.

  • Critical: Equipment and Utensils - Before Use After Cleaning* (corrected on site)
    Observation: Observed dishes and utensils not being sanitized after cleaning and before use. Observed the dishmachine not properly sanitizing and operating per the manufacturer's data plate. Dishmachine observed operating as follows: wash temp. @ 110 F, rinse temp. @ 140 F and rinse pressure @ 30 psi. No color change observed on temperature indicating tape.
    Correction: Recommend that after cleaning and rinsing of the food-contact surface, the surface shall be effectively sanitized before coming in contact with food and before use. Recommend having dishmachine serviced. * All dishes and utensils must be cleaned and sanitized in the 3 basin sink until the dishmachine is repaired and properly sanitizing. PIC setup 3 basin sink
