Don't use sink ml (3 compartment) where condenser water drains for food prep. Clean and sanitize 3 compartment sinks before using for food prep and again before using for dishwashing. If you need to wash dirty equipment when you have food in 3 compartment sink, you still need to follow wash, rinse, sanitize procedure without contamination food. Provided employee health handout in Chinese. Store cabbage and carrots on shelf 6" above floor. Cover flour, etc. when not using. Do not reuse containers your food comes in for food storage containers-vinegar, peanut butter, etc. Some flies present-keep doors closed.
