Use the proper equipment to maintain temperature or establish a policy to discard within 4 hours after taking out of temperature control.
Comments:
Remember to keep all potentially hazardous foods (PHFs) such as hard boiled eggs, cream cheese, milk, etc. at 41 degrees or below or 135 degrees F. and above if hot held. Or you can establish a written policy stating that all PHFs will be discarded within 4 hours after taken off temperature control. All employees who work with continental breakfast daily to include supervisor should attend a basic food safety class to ensure that they are properly trained with all aspects of food safety.

Milk and juice were being provided in commercial grade containers that could maintain product at proper temperatures if properly refrigerated prior to use. Proper cleaning of these containers is crucial because they do deviate somewhat from the Continental Breakfast Guidelines. Therefore, ensure they are properly cleaned and sanitized at the conclusion of each Continental Breakfast. No violations were observed. A copy of the Guidelines was provided. Ensure that they are properly followed.
