Comments:
Egg Patties had been removed from the serving line already and were in the process of being thrown out. No deficiencies were found. It is recommended to put in a small handwashing sink and a 3-compartment sink nearby for handwashing and cleaning of equipment for the continental breakfast as soon as possible. Should send at least two people to food safety training as soon as possible to train in fundamentals and basics is food safety and foodborne illness as it is a requirement to knoe it. Permit was posted. EHS was provided training.

Eggs and sausage links are discarded in approximately 3.5 hours after taken out of temperature control. *Strongly recommend that any/all foodservice personnel that work with continental breakfast attend a basic food safety class as soon as possible to learn more about food safety, cleaning and sanitizing, bacteria and virus such as Norovirus to protect against them. Provide written procedures for the use of time as a public health control. The procedures must include the following steps or practices: a. Food must be marked with the time within which it must be cooked, served or discarded. b. The food is served or discarded within four hours from the time when the food is removed from temperature control c. Food in unmarked containers or packages, or for which the time expires is discarded and d. Written procedures are maintained in the food establishment and made available to the regulatory authority upon request e. Once time is implemented as a control measure for potentially hazardous food, no other measures may be substituted.

Commercial grade pitchers were being used which deviate somewhat from the Guidelines of the Continental Breakfast. Ensure the they are properly cleaned and sanitized after conclusion of the Continental Breakfast. Ensure that the Guidelines are properly followed.
