Reviewed topics and specific foods used in the establishment. Proper date marking of ready to eat foods. Dishmachine and three compartment sink sanitizing properly. Excellent hot holding, cold holding, and cooking temperatures. Also, great storage of foods and separation of raw foods. Employees were observed wearing and changing gloves and washing their hands when necessary. Also,owner is ServSafe certified. Discussion about consumer advisory for menus, drain for walk in cooler, and paper towel rack for handsinks. Keep up the great work! The firm is in the process of remodeling and has provided an updated menu and plan for review. The owner has been working closely with the local building officials in order to meet all of the local and state ordinances and in accordance with the current food laws and regulations. Once the building officials have provided approval along with an occupancy permit the owner should contact our office for inspection At this time the owner contemplates opening within the next 60 days and will contact our office. At that time a pre-opening inspection will be conducted and if observed to be in accordance with the current food regulations a permit may be issued..
