Gave operator an Overeasy Food Safety application as operator's Overeasy credentials expired in August, 2008. Quaternary ammonium sanitizer concentration level in the wet wiping cloth bucket measured at 200 ppm. Ensure all refrigerator/freezer units have working thermometers. Observed good handwashing and glove use during inspection.

Violation: 1770 A - Critical The following equipment food-contact surfaces were observed soiled to sight and touch: microwave. Clean and sanitize these surfaces for food contact.
Comments:
This critical inspection was conducted due to a complaint received on January 11, 2008. Cannot substantiate concerns regarding complaint received January 11, 2008. Concerns were discussed with the operator. Discussed with operator: Only wash hands at the handsink not the 3 compartment sink. Ensure quaternary ammonium sanitizer in wet wiping cloth bucket measures at 200 ppm. The hood system is scheduled to be cleaned tonight. Do not reuse manufacturers containers for the storage of food such as soy sauce. Provide food grade containers to hold marinating chicken. Provide thermometers in all refrigeration units. Ensure all dispensing utensils have handles. Observed chicken thawing under running water at 48'F with sufficient velocity to remove particles. Ensure all food items and equipment are stored 6" off of the floor. Conduct a detailed and thorough cleaning of all floors, walls and ceilings, as well as all equipment to include refrigeration units.

Comments:
Inspection conducted with the Building Dept. official of the repairs to the direct connection under the 3 compartment sink. PIC has installed an indirect connection under the 3 compartment sink; however the repairs are not in compliance. Sink has 3 P traps - per Bldg official - sink can only have 2 P traps. PIC will schedule another inspection when 1 P trap is removed.

Virginia Department of Health permit is issued to facility subject to the Fire Department's approval of indirect connection under the 3 compartment sink. Per PIC ceiling tiles will be changed out to smooth, easily cleanable and non absorbent. Comments:
Please address the following items prior to receiving a Virginia Department of Health permit: 1. Provide food grade containers for food 2. Clean the microwave in the dry storage area 3. Provide an indirect connection between the sewer line and the 3 compartment sink 4. Clean floors especially under equipment and at the floor/wall junctures. 5. Provide a large trash container with a lid as the trash is stored in the facility for pickup every 2 days. 6. Remove all unnecessary items in the water heater area. 7. Ceiling tiles in prep area need to be smooth, easily cleanable and non absorbent. Health Department was not notified of change of ownership which occurred on April 30, 2007. Once the above list has been accomplished, please call the Health Department for another inspection prior to issuing the permit.
