Mark a 24 hour "consume by" date once the food is thawed. Prior to freezing once opened, indicate the length of time the food was held refrigerated which is 7 days or less at 41F. When the food is removed from the freezer indicate the date by which the food shall be consumed which is 7 days or less at 41F minus the refrigeration time before the food was frozen.
Comments:
Sandwich refrigeration has been removed from service. Establishment has ceased to offer home canned foods. Water sample will be taken prior to permit renewal in October. Hot water valve will be repaired on front handsink.

Mark the name and "consume by" date on the container of RTE foods at the time of preparation if the food is to be held for more than 24 hours. If the food is held at 41F or below the food shall be served or sold within 7 calendar days. Some harmful bacteria continue to grow even at refrigeration temperatures so limiting the amount of time in storage limits the amount of growth allowed for these bacteria.

Gasket has been replaced on walkin freezer. Make sure that sanitizer is available when washing-rinsing-sanitizing equipment and utensils in 3-comp sink process - sanitizer was replaced during inspection. Spoke with owner by telephone during inspection to relay results of inspection and to discuss source of home-canned foods. Owner is to contact health department with information on source of foods. Baked goods will be labeled as required.

Purpose of visit was to confirm water sample was taken (3-7-07) and to confirm repair of sandwich unit and walk-in freezer. Sandwich prep has been repaired, yet still retains a bit of water on bottom of unit. All items were moved to upper shelf, and bottom will not be utilized until problem can be permanently solved. Gasket for walkin unit is to arrive next week. Owner provided contact information for engineer working on walkin freezer.

Animals carry disease-causing organisms and can transmit pathogens to humans through direct and/or indirect contamination of food and food-contact surfaces. Animals shed hair continuously and may deposit liquid or fecal waste, creating the need for vigilance and more frequent and rigorous cleaning effort.

Please contact the health department as soon as possible regarding the repeat violations. Items must be corrected before permit can be reissued.

Did not observe food preparation at time of visit. Ice scoop is being stored properly. Two-burner hot plate has been replaced. Owners have attempted to replace/repair gasket on walk-in freezer door. Repair person is still searching for replacement to very old unit.
