Violation: 3-501.17(A)(1) - Corrected During Inspection Critical The following ready-to-eat, potentially hazardous food in the refrigeration unit is not used within 24 hours of preparation and is not properly dated for disposition within 7 days at 41F: rice, pupases stuffing
Refrigerated, ready-to-eat, potentially hazardous foods (time/temperature control for safety food) that are prepared on site and held at 41For below shall be clearly labeled and date marked with a "USE BY" not exceeding 7 TOTAL DAYS.
Comments:
The purpose of today's visit was to conduct a critical procedure inspection. If there are any questions please contact the EHS inspector. Thank you.

November 19, 2008 (Follow-up)

Violations:

• 4-501.11(B) - Observed that door on Mr. Winter walkin refrigerator does not close tightly - there is a 1/4" gap when door is closee. It appears that the hinges are not set square.
  Adjust the door to close tightly.
• 5-205.15(B) - Repeat Observed a leak a tthe prep sink when the water is turned on.
  Repair leak.
• 6-303.11(C) - Observed three light bulbs out in the hood.
  Replace burned out bulbs.

Comments:
The purpose of this inspection was to follow up on a pre-opening inspection from November 3, 2008. Substantially all violations have been corrected. Thank you. All remaining violations must be corrected by the time of the first routine inspection - in approximately 30 days.
