Correction: Protect food from miscellaneous sources of contamination.
- Food Contact Surfaces - Cleanability*
Observation: The surface of the walk in is not accessible for cleaning and inspection.
Correction: Multiuse food contact surfaces shall be accessible for cleaning and inspection: 1. without being dissambled. 2. by disassembling without the use of tools. or 3. by easy disassembling with use of handheld tools such as screwdrivers, pliers, open-end wrenches and Allen wrenches.

Observation: Small prep unit cold holding at improper temperatures.
Inspectors note: At time of inspection top of prep unit door was open and restaurant was just finishing up lunch rush. Owner ensured that unit is capable of maintaining temp. Advised to discarded any or all TCS food that have been out of temp for longer than 4 hrs.
Correction: Relocate food to a refrigeration unit that is capable of maintaining food storage at 41°F or below.
- Food Contact Surfaces - Cleanability*
Observation: The food contact surface of main prep cutting boards needs to be smooth and it contains cracks, chips, or pits that can not be easily cleaned.
Correction: Need to replace cutting boards

Operator needs to boost the temperature for the dishmachine. Discussed cutting the vacuum packed bags fish when thawing to allow the air in the bags. All temperatures found in compliance active managerial control in place. Employee verifying temperatures at there work station observed.

Observation: Raw food of animal origin holding in a manner that may cause cross contamination of to ready-to-eat food (RTE). Raw eggs stored over vegetables.
Correction: Separate raw foods during storage, preparation, holding, and display from raw RTE food including other raw food such as fish for sushi or molluscan shellfish, or other raw RTE food such as vegetables, and cooked RTE food. Operator corrected during the inspection.
