Facility needs to provide a tip sensitive thermometer to enable temperature taking for thin foods. NEW CHANGE IN RULES - Facility must provide test strips to show that the dishes in the hot water dish machine have reached a temperature of at least 160 degrees F. - Warewashing - Mechanical Warewashing Equipment, Hot Water Sanitization Temperatures (corrected on site) (repeated violation)
Observation: The water temperature in the manifold servicing the high temperature ware wash machine was below the minimum allowable level of 165ºF for a stationary rack single temperature machine. The thermometer read 190 degrees but the temperature sensitive strip did not turn and we were unable to hear water spraying during the rinse cycle.
Correction: Immediately discontinue the use of the machine until it is operating in accordance with minimum requirements. Initiate manual wash, rinse, and sanitize method to properly clean and sanitize equipment and utensils. This machine has been out of compliance on every inspection for 2 years and must be replaced. Facility has agreed to use disposable cups and plates until they can replace the dish machine as the sinks are not set up in way to facilitate easy 3 step cleaning.

Observation: The water temperature in the manifold servicing the high temperature ware wash machine was above the maximum allowable level of 194ºF. The thermometer read 205 degrees F. It did not turn the temperature strip when the strip was at the top of the pan. The arms in the machine are all coated with lime/calcium which may be preventing the water from coming out of the small holes in the arms..
Correction: Immediately discontinue the use of the machine until it is operating in accordance with minimum requirements. Initiate manual wash, rinse, and sanitize method to properly clean and sanitize equipment and utensils. Arms in the machine are coated with lime/calcium. Suggest cleaning all water outlets and reducing temperature to meet guidelines.
