Violations:

• 0820 A 2 - Corrected During Inspection Critical Containers of cooked chicken cold holding at improper temperatures. Internal temperature measured 46F (holding time >6 horus)
  Relocate food to a refrigeration unit that is capable of maintaining food storage at 41F or below.
• 3045 - A sign or poster that notifies food employees to wash their hands is not provided at all lavatories used by food employees
  Provide a sign or poster that notifies food employees to wash their hands at all handwashing lavatories used by food employees. This includes restrooms.

Comments:
Operator to relocate cooked chicken storage area away from walk-in refrigerator door-also educate staff about not stacking containers.
Remainder operation good.
Note: Ensure all refrigerator units have internal thermometers that are placed for easy temperature monitoring of unit.

June 23, 2008 (Routine)

Violation: 0220 - Corrected During Inspection Critical Repeat In use open drinking containers stored in a manner that may contaminate food, food contact surfaces or utensils. Observed open employee drink container stored on food preparation surface.
Employees may drink from a closed beverage container if the container is handled to prevent contamination of (1) The employee's hands (2) The container and (3) Exposed food clean equipment, utensils, and linens and unwrapped single-service and single-use articles.
Comments:
Excellent cleaning practices. Food and equipment temperatures observed to be in the proper range. Good food storage and protection practices.
Facility in substantial compliance with the Food Regulations.

August 22, 2007 (Routine)

Violations:

• 0220 - Critical In use open drinking containers stored in a manner that may contaminate food, food contact surfaces or utensils.
  Employees may drink from a closed beverage container if the container is handled to prevent contamination of (1) The employee's hands (2) The container and (3) Exposed food clean equipment, utensils, and linens and unwrapped single-service and single-use articles.
• 0570 - Wiping cloths improperly stored between use.
  Ensure wet wiping cloths are stored in a chemical sanitizer at the proper concentration between use.
• 1770 C - Observed accumulations of dust, dirt, food residue or other debris on the following nonfood-food contact surfaces: Exterior surface of food storage containers stored on prep. table shelf, A/C ceiling vents, and caulk line of 3 vat sink.
  Maintain nonfood-contact surfaces of equipment clean.
• 3220 - Mop not hung up to air dry.
  Wet use maintenance items such as mops must be hung in a position that allows them to air dry so they are not allowed to grow contamination which can then be spread through the establishment at the next use.

Comments:
Change of ownership. Operator states no structural or equipment changes to occur at this location as a result of change of ownership. Today, facility with overall good level of cleanliness and organization. Temperature controls in place.
