This was a risk factor assessment inspection. The inspection focused on critical violations and their corrective action. No critical violations were observed during this inspection. The ware washing machines passed the heat tape tests. The facility as a whole was observed to be visibly cleaned.
The manager on duty was given the ACTIVE MANAGERIAL AWARD created by Fairfax County Department of Health. During the inspection, the manager demonstrated knowledge and demonstrated measures of active managerial control to ensure food safety at this food establishment. Logs are actively maintained for calibration of thermometers, temperature control equipment, cooling foods,and food receiving temperatures,
The facility maintains pre/post operation inspection each day to ensure that food constant and nonfood contact surfaces of equipment and utensils are maintained in clean and good sanitary contain. Each log has a column for corrective actions.

    Observation: The top surfaces of the ware washing machines have debris accumulations.
    Correction: Clean all surfaces of the ware washing machines frequently to prevent debris build-up.
  • Lighting Intensity/ Food Prep Area / 50 foot candles
    Observation: Observed that inadequate lighting was provided in the food preparation areas. several light under the hoods were burned out.
    Correction: Increase the lighting to provide a minimum of 50 foot candles in all food preparation areas. Replace the burned out light bulbs to provide proper lighting above the cooking surfaces.

The purpose of this visit was to conduct a routine inspection.
Manager will fax over a copy of invoice for dishmachine by Oct 21, 2013.

  • Clean Ice Bins, Beverage Dispenser Nozzles, Etc. per Manufacturer Specs.
    Observation: Surfaces of ice bins and enclosed components of equipment are not being cleaned as required.
    Correction: Surfaces of utensils and equipment contacting food that is NOT potentially hazardous (time/temperature control for safety food) such as ice bins, beverage dispensing nozzles, and enclosed components of equipment such as ice makers, cooking oil storage tanks and distribution lines, beverage and syrup dispensing lines or tubes, coffee bean grinders, and water vending equipment at a frequency specified by the manufacturer or at a frequency necessary to preclude accumulation of soil or mold.
  • Critical: Sanitize / Hot Water / Mechanical/Thermolabel Test Verified
    Observation: Due to improper operation of the hot water, mechanical warewashing machine, the thermolabel did not turn black, indicating that food-contact surfaces of equipment and utensils are not being adequately sanitized.
    Correction: Immediately discontinue use of the dishmachine. Repair the dishmachine so that a thermolabel will turn black. Until the machine is adequately repaired, set up the 3 vat sink to manually wash, rinse and chemically sanitize food-contact surfaces.
  • Physical Facilities Good Repair
    Observation: Observed that the dials on dishmachine #2 are not working and are not maintained in good repair.
    Correction: Repair the physical facilities. Poor repair and maintenance compromises the functionality of the physical facilities.
