Wingate by Wyndham routine inspection. Upon arrival, discovered food facility is under construction. Completed an inspection of the temporary food facility. Hot food is not currently being offered due to renovations. Facility has hand wash ability, 3-vat sink washing ability, and cold hold ability. Area is protected from construction contamination. Temporary set-up is approved for use.

    Observation: Observed ham, sausage, and grozen omelets at room temperature.
    Correction: Cold hold potentially hazardous food at 41°F or below to inhibit the growth of harmful bacteria.

    Observation: The handwash station in the kitchen is being used as a dump station.
    Correction: The handwash facility identified above is to be used for washing hands only

Observed hand soap at 3-vat sink. Instructed to keep hand soap at the hand sink to discourage hand washing at the 3-vat sink and encourage hand washing at the hand sink.
  • Equipment - Good Repair and Proper Adjustment (corrected on site)
    Observation: Reach-in cooler in the storage room is cold holding at 50F. (Shipment was received today. Dial had been bumped by shipment. Dial was adjusted during inspection.) (Phone call received from management. Unit temperature returned to 38F.)
    Correction: Monitor the equipment to ensure temperature returns to 41F or below. If the unit remains above 41F, remove the food to a unit that can maintain 41F and have the unit repaired or replaced.
  • Critical: Equipment and Utensils - Before Use After Cleaning* (corrected on site)
    Observation: Dishmachine is not sanitizing dishes. (Dishmachine restored to 172F and rinse 201F.)
    Correction: Discontinue the use of the dishmachine begin manual wash, rinse, and sanitize. After cleaning and rinsing of the food-contact surface, the surface shall be effectively sanitized before coming in contact with food and before use.
