    Observation: Wiping cloths improperly stored between use.
    Correction: Ensure wet wiping cloths are stored in a chemical sanitizer at the proper concentration between use.

Note:Frequency for the change the metal scouring pads has been increased to as needed, or every other day, to eliminate the potential of possible physical contamination of food products, on the cookline and warewashing areas.

    Observation: Male food workers/employees were observed working in the food service area without proper hair restraints ( prepping raw chicken, in the kitchen).
    Correction: Ensure all employees wear hair restraints such as hats, hair coverings or nets, beard restraints, and clothing that covers body hair, that are designed and worn to effectively keep their hair from contacting exposed food, clean equipment, utensils and linens, and unwrapped single-service and single-use articles. The cookline small maketable unit was observed with a pan of ice placed within the bottom refrigerated compartment (ambient air reading 42 degrees F). I informed the operator to have the cookline refrigeration units service to maintain TCS food products temperatures of 41 degrees F or below.
