Nonfood-Contact Surfaces - Corrosion Resistant/Nonabsorbent (corrected on site) Observation: Cardboard observed being used for lining on shelves storing food in kitchen.
Correction: Operator voluntarily discarded said cardboard and used sheet pans.
Critical: Equipment and Utensils - Before Use After Cleaning* (corrected on site) Observation: The food-contact surfaces of the following equipment were not observed sanitized in that dishes and utensils were observed being washed and rinsed in one of the compartment of food prep sink.
Correction: After cleaning and rinsing of the food-contact surface, the surface shall be effectively sanitized before coming in contact with food and before use. Operator voluntarily washed, rinsed and sanitized said dishes in 3 compartment sink and instructed the employees to use food prep sink only for said purpose.
Hand Drying Provision (corrected on site) Observation: No disposable towels were provided at the hand washing lavatory in the kitchen next to the cookies and dessert holding reach in freezer.
Correction: Operator voluntarily re-stocked the paper towel in said handwashing facility.

Sanitizing Solutions, Testing Devices Observation: There is no properly working test kit provided in the facility for monitoring the concentration of the chemical sanitizing solutions.
Correction: Obtain a sanitizer test kit so that employees can accurately monitor the concentration of the sanitizing solutions and maintain them at a safe and effective level.
Physical Facilities in Good Repair Observation: Two compartment prep sink observed with a broken pipe.
Correction: Maintain physical facilities in good repair. Poor repair and maintenance compromises the functionality of the physical facilities.

Routine
All refrigeration units registered at adequate temperature i.e. less than 41 degrees F. Sanitizer provided for 3 compartment sinks. Hot and cold running water provided in all hand washing, ware washing and food prep sinks. Registered at adequate temperature. Adequate lighting provided and shielded. Note outdoor garbage container must be provided prior to opening. Permit approved. No violation noted during this evaluation.
