Cooling Methods (corrected on site) Observation: Containers observed on counter covered and stacked for cooling.
Correction: Cool foods properly using the 2 stage cooling method. Cool from 135 degrees F to 70 degrees F within 2 hours then from 70 degrees F to 41 degrees F within 4 hours. Do not cover or stack. Cooling informational handout left with operator.
Light Bulbs Protective Shielding Observation: Some shields over light bulbs missing in food preparation area.
Correction: Shield lights as needed.
Distressed Merchandise, Segregation and Location Observation: Dented cans on storage shelves.
Correction: Move dented cans to another area so they will not be used and returned to vendor for replacement or credit.
Physical Facilities - Cleaning Frequency and Restrictions Observation: Floors under fryers need cleaning. Walls, ceilings and lights have dust accumulation.
