    Observation: Food service employees were working in the food service establishment without having a valid food service card. Had discussed this in previous inspection and had left current schedule. All employees to obtain food handler cards before follow-up.
    Correction: A food service employee shall have a valid food service card prior to working in the food service establishment. The person in charge shall not employ anyone to work in the food service establishment until they posses a valid food service card. A food service employee shall have a valid food service card while working in a food establishment.
  • Cloths - Wiping Cloths; Use Limitation
    Observation: Heavily soiled wiping cloths in use.
    Correction: Replace wiping cloths once visibly soiled. Wiping cloths shall be free of food debris and visible soil.
  • Warewashing Equipment, Cleaning Frequency
    Observation: The compartments and drainboards of the 3 compartment sink are heavily soiled.
    Correction: Clean the sink compartment(s) or drainboards: 1) before use

    Observation: The nonfood-contact surfaces of the following equipment were observed soiled with an accumulation of dust, dirt, food residue, and/or other debris: tables, fryers, cold holding units, work tops and shelves.

    Observation: Facility is storing unnecessary items (in the back utility room) to the operation or maintenance of the establishment.
    Correction: Remove all unnecessary items from the facility. The presence of unnecessary articles, including equipment which is no longer used, makes regular and effective cleaning more difficult and less likely. It can also provide harborage for insects and rodents.

  • Equipment - Food Contact Surfaces, Nonfood Contact Surfaces, and Utensils (repeated violation)
    Observation: The nonfood-contact surfaces of the following equipment were observed soiled with an accumulation of dust, dirt, food residue, and/or other debris: White plastic tub lid (over the flour), inside freezer unit K and F, door seals/ gaskets on walk-in and walk-in freezer.
    Correction: Maintain nonfood-contact surfaces of equipment clean.

    Observation: There is no refuse container at the area immediately adjacent to the kitchen hand sink.
    Correction: Provide a hand sink for the disposal of paper towels at the hand sink.

    Observation: Floor or floor covering in both walk-in coolers is not smooth and easily cleanable.
    Correction: Repair or replace floor or floor covering to make it smooth and easily cleanable.

    Observation: Light bulb over the dry storage racks are not shielded, coated, or otherwise shatter-resistent.
    Correction: Shield or replace light bulb with a coated or shatter-resistent bulb.

    Observation: Less than 50 foot candles of light was noted in the biscuit room. All burnt out bulbs need to be replaced.
    Correction: Provide at least 50 foot candles at a surface where a food employee is working with food or working with utensils or equipment such as knives, slicers, grinders, or saws where employee safety is a factor

    Observation: The following is not maintained in good repair: Hole is ceiling in the back where dry storage shelves are and outside door of freezer.
    Correction: Maintain physical facilities in good repair. Poor repair and maintenance compromises the functionality of the physical facilities.

    Observation: Floor drains (under biscuit table and the 3 compartment sink) and vent above break room area, noted in need of cleaning.
    Correction: All floors, walls, and ceilings must be cleaned as often as necessary to keep them clean. Cleaning of the physical facilities is an important measure in ensuring the protection and sanitary preparation of food. A regular cleaning schedule should be established and followed to maintain the facility in a clean and sanitary manner.

    Observation: Torn refrigerator door gaskets on bith the walk-in refrigerator, stand-up refrigerator, and stand-up freezer.
    Correction: Replace the damaged door gaskets with ones that are in good condition.
  • Non-Food Contact Surfaces (corrected on site)
    Observation: The refrigeration door gaskets for the walk-in refrigerator and stand-up refrigerator were coated with a slimy mold.
    Correction: Clean the surface at a frequency necessary to preclude accumulation of soil residues that become encrusted or attract insects and rodents.

    Observation: A distinct, separate water rinse after washing and before sanitizing of utensils and equipment was not observed.
    Correction: For CLEAN IN PLACE equipment, a 3-step washing, rinsing, and sanitizing procedure must be observed and properly utilized.

    Observation: Ceiling lights located in the dry goods/supply storeroom are not shielded, coated, or otherwise shatter-resistent.

    Observation: Chipping paint surfaces observed on the wall located above the 3-compartment sink, and the ceiling above the walk-in cooler/freezer.

    Observation: The door gasket of the Traulsen stand-up freezer's lower door was split and damaged.
    Correction: Replace the damaged refrigeration door gasket in accordance with the manufacturer's specifications.
