No food prep at inspection time. Facilities appear to be very clean, in good shape.

Comments:
Observed training of personnell, PIC went over hygene, glove use, handwashing, calibration of thermometer, tempertures. PIC has excelent knowledge of food safety and makes sure all employees are trained properly. Thank you for doing such a good job.

Facility in great shape. PIC was able to answer all questions and has a good knowledge of food safety.

Comments:
No Critical violations noted during inspection. No cooking going on at this time. Will have to arange a time to see cooking for the next inspection. Facility is in great shape. There are some wood items in the kitchen that need to be painted/sealed and the wooden cutting board on the non-functioning prep unit is wore and new cutting boards should be obtained. Discussed food processes and the facilty only has one rare ptf.

Violation: 0760 - Critical Hotdog chili was observed in a temperature danger zone of 90 degrees F in Crock-Pot. It was just placed in the hot holding container, less than 15 minutes. The holding temp. is a minimum of 140 degreesF.
Chili was taken out to be rapidly heated up to a temperature of 198 degrees F. Crockpot was turned up on high & temperature for holding was steady @ 165 degrees F.
