  • 4-601.11A - Critical 1. The following utensils were observed soiled to sight and touch: Pitchers used for blending various drinks were rinsed between uses on the rinse-o-matic with cold water. The rinse action was observed to leave milk residue on the pitcher . It was said that the pitchers may be run through the dish machine every four hours, but no visible procedure appeared to be in place to assure that this important task was being accomplished.
  • 4-703.11C - Critical Due to improper operation of the low temperature chemical sanitizing mechanical warewashing machine, equipment food-contact surfaces and utensils are not sanitized after cleaning. (See 4-501.114). The procedure demonstrated by the kitchen personnel of placing 5 cups upright in a rack and interrupting the cycle just prior to the sanitizing cycle is not acceptable. The sanitizer at the correct concentration must be on the food contact surfaces at the conclusion of the sanitizing cycle.
  • 5-203.14A - Critical Observed a hose attached to a faucet fixture. The hose for the rise-o-matic pitcher washer extended below the flood rim level of the sink basin. Our Richmond Office determined that there is no acceptable backflow device built into the rense-o-matic device.

The above observations wree discussed with the manager. Additionally, temperature checks were done on the cooking process used for the refrigerated ready-to-eat sandwiches delivered to the facility. The final cook temperature was observed to be from 126 degrees (after post cook rise) to 156 degrees F at the hottest places when done in the combination microwave browning oven. The internal directions appear to be for heating only to palatibility. For sandwiches that have undergone any temperature abuse during preparation or delivery they must be cooked to 165 degrees F. AHD has been unable to verify the conditions of manufacture or delivery for these products.

2. A couple of flies observed in the back storage area and dine area. Please seek the advice of your professional pest control company.
3. Please monitor half-half creamer. creamers must be maintain at 41 degrees or below. i was advised by the Certified Food Manager, that creamers are changed out every two (2) hours.
3. The overall facility in good condition. Good sanitation and good food safety practices.
4. Please advise your chemical service company to install a backflow prevention device on the chemical dispensing unit at the mop sink.
