- Critical: Cold Holding of Potentially Hazardous Food at 41°F or less (corrected on site)
Observation: The following food items were observed cold holding at improper temperatures using a calibrated food temperature measuring device:Observed sliced smoked turekey at 43F, sliced tomatoes at 44F in the walk in
Correction: Potentially hazardous foods (time/temperature control for safety food) shall be held cold at a temperature of 41°F or below unless the permit holder is using "time as public health control" as specified under 3-501.19 to limit bacteria growth.THE PHF/TCS FOOD RELOCATED IN THE WALK IN TO THE COLDEST PORTION, AWAY FROM THE DOORS
- Critical: Sanitizers, 21 CFR Criteria for Food Contact (corrected on site)
Observation: The concentration of the quaternary ammoni solution was measured at above 200ppm. This concentration exceeds the approved limits for use with food-contact surfaces of equipment and utensils in a foodservice establishment.
Correction: Maintain the concentration of quaternary ammonia solution at 200ppm. Verify concentration using the appropriate test kit.

Follow up inspection was made to observe the access made to the rest room. without having to pass behind the counters and sandwich stations. Owner has made a clear access to the rest rooms by creating a conduit between the front counters for the public access and placed a restroom sign. bVIolation has been corrected. - Modifications to FDA Food Code/Section 6-402.11, Toilet Rooms Required with Seating, Not Accessed through Food areas, Accessible at all hours of operation
Observation: Observed no proper access to the public restrooms in the food establishment. OBSERVED THE ONLY ACCESS TO THE RESTROOM WAS BY PASSING BEHIND THE FOOD DISPLAY CASES AND AND STORAGE AREAS
Correction: Public toilet rooms shall be provided for consumers whenever seating for consumers is provided on the premises. Consumers shall not be permitted to gain access to toilet rooms by passing through a kitchen, food preparation, food storage, or utensil washing area. Toilet rooms shall be conveniently located and accessible to employees during all hours of operation. Toilet rooms must be entirely separate and apart from any rooms or areas used for utensil washing or the manufacture, storage, and handling of food products. Public and employee toilet facilities shall be installed according to and in the number required by the Virginia Uniform Statewide Building Code. MANAGER HAS BEEN GIVEN 90 DAYS TO MAKE AN ACCESS TO TOILETS WITHOUT PUBLIC HAVING TO PASS BEHIND THE FRONT COUNTER AND DISPLAY/STORAGE REFRIGERATORS.

- Food Storage / Preventing Contamination
Observation: Food stored on the floor and/or food stored less than 6 inches off the floor.-Observed boxes of ham and sides stored on the floor in the Norlake Freezer 10 and Cooler 8.
Correction: Food shall be protected from contamination by storing the food at least 6 inches off the floor on approved shelving units or dunnage racks. Milk crates, soda crates, or bread racks are not suitable for food storage.
- Handwashing Sink / Accessible at All Times (corrected on site)
Observation: The handwashing facility located at the glazing station is blocked, preventing access by employees for easy handwashing.
Correction: A handwashing sink shall be maintained so that it is accessible at all times for employee use. -CORRECTED DURING INSPECTION BY THE CFM REMOVING THE CART AND ITEMS AWAY FROM THE SINK TO ANOTHER AREA.
