The following items were observed and discussed during this inspection.
- Monitoring records are being kept for proper cold and hot holding, cooking, reheating and cooling foods.
- A new chest freezer has been purchased.
- Methods developed for proper cooling foods.
- Air conditioner purchased for inside mobile unit.
- Plumbing under sink been repaired to prevent it form leaking.
- New thermometers purchased to assure internal temperatures are being taken as needed.

Methods need to be developed and put into place to assure foods are being cooled within the proper time frames (135 to 70 2 hours - 70 to 41 or below 4 hours). Educational cooling materials were left with owner. All foods found at improper temperatures were voluntarily destroyed in presence of inspector. Informed by owner pork roast had been cooked this morning and dated 7/9/15.
  • Critical: Cooling* (corrected on site)
    Observation: BBQ pork & Chicken, ribs and green beans noted not being adequately cooled to prevent the growth of harmful bacteria.
    Correction: Cool potentially hazardous foods from 135°F to 70°F within 2 hours and within a total of 6 hours from 135°F to 41°F. A longer time for cooling allows an ideal situation for bacterial growth. This has been shown to be the major contributing factor in many foodborne illnesses. Foods were voluntarily destroyed in presence of inspector.
  • Cooling Methods
    Observation: The methods used for cooling and refrigeration units were not adequate proper cooling foods.
    Correction: Cool foods by the following methods: 1. Placing food in shallow pans 2. Separating food into smaller thinner portions 3. Using rapid chill cooling equipment 4. Stirring the food in a container placed in an ice water bath 5. Using containers that facilitate heat transfer 6. Adding ice as an ingredient 7. Any other method that can effectively accomplish cooling. 8. Purchase equipment to maintain temperatures of 41 F or below at all times.
  • Plumbing System Maintained in Good Repair
    Observation: Plumbing connections under the 3 compartment sink are leaking.
    Correction: Plumbing systems and components shall be maintained in good repair.
