The facility was previously made aware of the plate storage issue and the fact that it would be nearly impossible to keep these food contact surfaces clean when they were stored directly below an area of heavy food preparation activity. The operator states that they routinely discard the top plate and then use the next plate in the stack. This practice shows that they are aware that they are routinely contaminating the food contact surface of the plates and are attempting to mitigate the problem by not using the top plates. The facility needs to find a storage solution for the plates in which the food contact surfaces will not become contaminated.

Comments:
All critical violations noted on previous inspection have been resolved. Continue new storage/cooling methods discussed regarding egg wash and other previously implicated products. Continue to monitor sanitizer concentration for future problems.
All non-critical violations noted on previous inspection have been addressed and are resolved or in the process of resolution.
Plate storage on the cook-line is still being addressed and multiple options are being explored.
