Adjust the sanitizing solution to 200 parts per million or otherwise identified by manufacturer's recommendations.(PIC added water to solution to dilute to correct concentration and called technician for service)
Comments:
Discussed new reg updates. New thermometer needed in Kelvinator RIC. Food made & used every 1-2 days. Procedures for heating soup have been changed and now thaw soup in RIC 1-2 days before. Equipment used to heat soup is a cooker as well as a warmer.

Comments:
All items corrected. Owner present. Discussed soup issue again and she said that unit is a cooker/holder and can heat within 2 hours. Discussed milk and carafs are cold holding at 45 or < most of the time. Usually carafs are stored in RIC overnight to help stay cold but had not been done on date of previous inspection. PIC indicates changed every 2 hours or discarded. Some food being made offsite with commercial kitchens and then transported to facility by owner. Seating capacity discussed as 37 seats observed at last inspection. Owner indicates on 26 seats used for dining as couches and sofas are not included in dining seats. Will repermit for 27 as previous.

1770 A - Critical The following equipment food-contact surfaces were observed soiled to sight and touch: ice machine observed with pink mold Clean and sanitize these surfaces for food contact.
2000 - Corrected During Inspection Clean tableware were observed stored with the food-contact surface facing upward. Store equipment and utensils covered or inverted to prevent contamination while in storage.
Comments:
Soup and milk observed not at proper temperature but within 4 hour period therefore did not cite as holding violation. EHS instructed PIC that food should reach proper temperature within 2 hours. PIC indicated that soup was frozen when put in unit. EHS advised needs to be heated to 165 degrees within 2 hours and then hot held at 135 degrees. Discussed changing thawing times. Product to be discarded at 4 hours if not at proper temperature. Soup was rechecked and heated in microwave to 165 within 4 hours and then held for service. Milk in carafs observed at 45.9 and 46.8. PIC indicates switched out every 2 hours. Advised that if using time as control versus temperature then will need something in writing. Discussed cooling methods of soup and reheating. Discussed CDC Risk factors, Updated food regs and handout given. Showed how to calibrate a thermometer. EHS to follow up on 2/29/08 for correction of critical violation.

Observed 200ppm.Other items to be corrected within 30 days: replace light bulb in RIF, hooks in place for hanging mops, mixing area shelves to be stained for easily cleanable,non absorbant surface and self closers installed on bathroom doors. Regulation book given. Certificate of Occupancy observed. Permit Granted.
