Discussed the following with the person in charge (PIC): employee health and corrective actions to violations. Raw shell eggs should not be used for the children except in baked goods. Post employee health sheet in kitchen after food service employees have signed it. Employees serving food without certification in food management must obtain food handler's cards in 90 days. Replace light bulb that is dim over stove.

    Correction: Separate raw foods of animal origin during storage, preparation, holding, and display from raw RTE food.

    Observation: There is no properly working test kit provided in the facility for monitoring the concentration of the chemical sanitizing solutions.
    Correction: Obtain a chlorine test kit so that employees can accurately monitor the concentration of the sanitizing solutions and maintain them at a safe and effective level.
  • Refuse - Storage Areas, Rooms, and Receptacles, Capacity and Availability
    Observation: There is no refuse container at the area immediately adjacent to the hand sink.
    Correction: Provide a refuse container for the disposal of paper towels at the hand sink.
  • Physical Facilities - Cleaning Frequency and Restrictions
    Observation: The floor under and beside stove was noted in need of cleaning.
    Correction: All floors must be cleaned as often as necessary to keep them clean.

    Observation: Eggs, meats, and cheeses were cold holding at improper temperatures
    Correction: Relocate food to a refrigeration unit that is capable of maintaining food storage at 41°F or below.
  • Critical: Date Marking - Ready-to-Eat - Potentially Hazardous Food - Date Marking*
    Observation: The prepared and commecially ready-to-eat (RTE) foods in the refrigeration unit were not properly dated for disposition.
    Correction: Mark the name and "consume by" date on the container of RTE foods at the time of preparation or opening commercially processed RTE foods if the food is to be held for more than 24 hours. If the food is held at 41°F or below the food shall be served or sold within 7 calendar days.
  • Critical: Food - Pasteurized Foods - Prohibited Reservice and Prohibited Food* (corrected on site)
    Observation: Raw shell eggs used in the preparation in facility serving highly susceptible populations.
    Correction: Substitute raw shell eggs with pasteurized shell eggs or pasteurized liquid, frozen, or dry eggs or egg products in the preparation of RTE foods. Raw shell eggs can only be used for baked goods.
  • Equipment - Good Repair and Proper Adjustment (corrected on site)
    Observation: Refrigerator is not holding foods at 41* F or below
    Correction: Adjust or repair refrigerator in order to hold foods at or below 41* F.

    Observation: There is no covered refuse container for the disposal of feminine napkins in the ladies room stall.
