Overall excellent sanitation. Good handwashing, glove use and food temperatures, storage and labeling. Noted, some additional shelving needed as well as additional cold holding equipment needed. Owner stated deliveries will be changed from 2 to 3 times per week. Good food processes and checks to ensure good cooking and cooling temperatures. Suggest using a temperature log - such as a notebook and list temperatures for cooking, cooling, etc. One new staff member needs district food handler card, will obtain today.

Correction: Discussed policy, symptoms, reportable diseases / close contact with reportable diseases discussed steps to take for each. New flyer will be sent.
- Cooling, Heating, and Holding Capacities
Observation: Walk in refrigerator and walk in freezer overcrowded. Good food temperatures, but some items stored on floor in walk in refrigerator and walk in freezer with food on inverted crates as well as shelves stacked completely full, was overstocked and is not sufficient in number or capacity to meet the food storage demands of the establishment.
Correction: Discussed with owner, he will increase frequency of deliveries to get less food more often.

Observation: Packages of to go boxes stored on inverted crates. One set of shelving in walk in refrigerator with bottom shelf on the floor.
Correction: Obtain shelving to store off of the floor at least 6 inches. Obtain shelving that has the bottom shelf is at least 6 inches from the floor to prevent contamination and allow for good cleaning and air flow.
