    Observation: The person in charge was unable to identify proper cooking, holding and reheating temperatures for potentially hazardous food.
    Correction: Ensure the designated person in charge (PIC) is knowledgeable about relevant food safety practices such as holding, cooking, and reheating

    Observation: Some of the foods are prepared at the owner
    Correction: s home, which is not under inspection by either the Health Department or the Agricultural Department (VDACS).

Mobile food truck now has hot running water. All food preparation and storage must be done in the food truck. Electrical work still be worked on for quick disconnect to make the truck readably moveable.The cabinets have been painted and repaired, the lights now have shielded bulbs, and a food thermometer is provided. Thank you for the quick response resume food operations and continue to make progress on other items.

Person in charge agreed to voluntarily close establishment. Get water for the food truck with an approved food grade hose. Food preparation has to take place on the food truck, not allowed to do any food preparation in detached rear storage room. Letter for approved waste water removal to be checked with the City of Harrisonburg.Food truck has to be readily moveable, so the currently hard wired electrical setup does not allow for the food truck to be mobile. Before resumption of operations the permit holder shall obtain approval from the Health Department. Provided the person in charge with food safety checklist, cleaning and sanitizing procedures, and food safety protection class opportunities.

    Observation: The person in charge failed to explain the correct procedures for cleaning and sanitizing, protection of water supply, cross-contamination, handwashing, etc.
    Correction: Ensure the designated person in charge (PIC) is knowledgeable about foodborne disease prevention, Hazardous Analysis Critical Control Point principles and Regulation requirements. The PIC should be prepared to recognize conditions that may contribute to foodborne illness. The PIC must also recognize conditions that fail to comply with Regulation requirements and be authorized to take the appropriate preventive and corrective actions to ensure that the Regulations' objectives are fulfilled.
  • Critical: Hands and Arms - Clean condition*
    Observation: Food employees observed with soiled hands becuase no running water to wash hands.
    Correction: Inform all food employees to keep their hands and exposed portions of their arms clean.
  • Wood, Use Limitation
    Observation: A tree section, wood log cutting bock is used as a food contact surface.
    Correction: Discontinue use of wood or wood wicker for this purpose. All food contact surfaces must be smooth, durable, and nonabsorbent, to prevent deterioration and to maintain an easily cleanable surface. Wood, if used, shall be hard maple or an equivalently hard, close-grained wood.
  • Temperature Measuring Devices - Food
    Observation: No food thermometer could be provided.
    Correction: Provide a temperature measuring device. Person in charge to purchase a thermometer.
  • Critical: Equipment - Food Contact Surfaces, Nonfood Contact Surfaces, and Utensils*
    Observation: The following equipment food-contact surfaces were observed soiled to sight and touch: tree section wood cutting block..
    Correction: Clean and sanitize these surfaces for food contact.

    Observation: The water source and system serving this food service establishment has been interrupted. Currently, establishment has no water on food truck.
    Correction: EHS is to confer with his/her supervisor for closure of establishment for an imminent health hazard. (See section 12 VAC 5-421-3910) Person in charge agreed to voluntarily close.
  • Critical: Water Capacity*
    Observation: Water heater observed turned off and not currently has any electrical power..
    Correction: Ensure that water heater is turned on and set at proper operating temperature. Person in charge contacted service contractor to fix the hot water heater.
  • Light Bulbs Protective Shielding
    Observation: Light bulb on roof of food truck not shielded, coated, or otherwise shatter-resistant.
    Correction: Shield or replace light bulb with a coated or shatter-resistant bulb.

Firm was busy during inspection. Owner and employees knowledgeable on food safety. Employees observed washing hands and wearing and changing gloves during inspection. All cooked foods being cooked properly and held at proper temperatures. Thermometer available to monitor internal temperatures on foods. Marilyn does a good job of preparing and handling foods.

    Observation: There is no properly working test kit provided in the facility for monitoring the concentration of the chemical sanitizing solutions.
    Correction: Obtain a chlorine test kit so that employees can accurately monitor the concentration of the sanitizing solutions and maintain them at a safe and effective level.
