The PIC stated that the sandwich meats had been take from their commercial packaging on the preceding day
Correction: the portions that were not served then were re-packed into approved food storage bags

Observation: Raw foods of animal origin stored over ready-to-eat (RTE) food in the refrigeration unit (walk-in freezer).
Correction: Separate raw foods of animal origin during storage, preparation, holding, and display from raw RTE food including foods such as fish for sushi or molluscan shellfish, or other raw RTE food such as vegetables, and cooked RTE food. In freezers, store opened cartons and/or ready-to-eat foods ABOVE raw foods of animal origin (example: store mashed potatoes OVER, not under, cartons of raw hamburgers).

Observation: The ambient (air/water) temperature measuring device (degrees F) located in the Hobart reach-in is not accurate.
Correction: Remove non-functional equipment and provide a temperature measuring device that is accurate within +/- 3 degrees Fahrenheit in the intended range of use.

Correction: Repair the EQUIPMENT to restore a state of condition that allows for proper operation, accuracy, functioning, maintenance, and cleanability per Part IV, Article 1 and 2 of this chapter. If unable to repair the EQUIPMENT, replace it with one that meets the specifications of Part IV, Article 1 and 2 of this chapter.
