Discussed various good retail practices including cleaning ceiling at air grates, replacement of sauce vat lid, not overstocking prep cooler with cheese, can opener (clean and sanitize every 4 hours if used) and not storing sheet pans on receptacle.

    Correction: Instruct staff to wash their hands after touching their face.

    Correction: Instruct staff to drink only from closed containers such as a cup with a lid and straw.
