Facility is clean and orderly. The only maintenance issue which must be addressed is the final rinse pressure gauge on the warewashing machine must be replace/repaired so that it is reading correctly.

Observation: The pressure gauge for the high temperature warewash machine was below 15 PSI.
Correction: Replace the pressure gauge on the high temperature warewash machine so that it can properly read the pressure of the final rinse pressure. The final rinse minimum pressure as indicated by the data plate is 20 PSI.

Discussed with the PIC the need to track cooling temperatures in order to make sure that PHF's are adequately cooled. We also discussed how placing a sealed hot holding cabinet inside a walk-in cooler will not allow food to cool in a timely manor.

Observation: Observed cooked turkey not being adequately cooled.
Correction: Cool potentially hazardous foods from 135°F to 70°F within 2 hours and within a total of 6 hours from 135°F to 41°F. A longer time for cooling allows an ideal situation for bacterial growth. This has been shown to be the major contributing factor in many foodborne illnesses.
- Cooling Methods (corrected on site)
Observation: Observed a hot holding cabinet pushed into the walk-in cooler to cool food. The food inside the cabinet was still warm and the cabinet was closed so that refrigerated air could not circulate around the food to adequately cool its contents.
Correction: Cease placing hot holding cabinets inside the walk-in cooler. Utilize speed racks to allow refrigerated air to circulate around food so that it can adequately cool. Cool foods by the following methods: 1. Placing food in shallow pans 2. Separating food into smaller thinner portions 3. Using rapid chill cooling equipment 4. Stirring the food in a container placed in an ice water bath 5. Using containers that facilitate heat transfer 6. Adding ice as an ingredient 7. Any other method that can effectively accomplish cooling.
