Observation: 1. Potato salad, chicken salad, roast beef, turkey and sliced tomatoes cold holding at improper temperatures.
Correction: Cold hold potentially hazardous food at 41°F or below to inhibit the growth of harmful bacteria. Time may be used as a public health control in lieu of temperature. Storing foods in more shallow containers may help in maintaining the proper temperature.

Observation: The person in charge could not provide a food temperature measuring device for measuring thin foods.
Correction: Obtain at least one food temperature measuring device for measuring thin food temperatures so employees can properly monitor the temperature of food items in the establishment.
