    Correction: Cold hold potentially hazardous food at 41°F or below to inhibit the growth of harmful bacteria.
  • Cooling, Heating, and Holding Capacities (corrected on site)
    Observation: Victory prep cooler cold holding @44°F.
    Correction: Repairman scheduled to repair cooler today. PIC will contact VDH when repair is complete. Improper food storage temperatures are a major contributing factor to foodborne illness.
    4:13 p.m. PIC reported cooler is fixed.
  • Equipment - Cutting Surfaces (repeated violation)
    Observation: The cutting boards are heavily scratched and scored. The food contact surface is no longer easily cleaned and sanitized due to condition.
    Correction: Resurface or discard and replace the cutting boards to provide a food contact surface that is smooth, easily cleaned and sanitized. 4:13 P.M.: PIC states cutting boards on order.

    Observation: 1. Potato salad, chicken salad, roast beef, turkey and sliced tomatoes cold holding at improper temperatures.
    Correction: Cold hold potentially hazardous food at 41°F or below to inhibit the growth of harmful bacteria. Time may be used as a public health control in lieu of temperature. Storing foods in more shallow containers may help in maintaining the proper temperature.
  • Temperature - Food Temperature Measuring Devices - Provided
    Observation: The person in charge could not provide a food temperature measuring device for measuring thin foods.
    Correction: Obtain at least one food temperature measuring device for measuring thin food temperatures so employees can properly monitor the temperature of food items in the establishment.
  • Equipment - Cutting Surfaces (repeated violation)
    Observation: The cutting board at sandwich prep unit is heavily scratched and scored. The food contact surface is no longer easily cleaned and sanitized due to condition.
