Note: The manager and I discussed the oven fire which occurred over the weekend. All food contact surfaces were wash, rinsed, and sanitized. The fryer was empty and all foods were covered along the line, since they were not open for service.

Observation: The plastic utensils for customers to use are stored in a manner in which the food contact portion of the utensil can be touched.

The complainant stated pets were allowed to enter the food preparation area and a staff member who touched the pet did not wash their hands before returning to work. I spoke with the manager concerning the complaint and she said she would speak to her employees concerning the complaint. Observation: Multiple foods in a reachin refrigerator were at improper temperatures
Correction: Ensure that potentially hazardous foods for cold holding are maintained at 41°F or below to inhibit the growth of harmful bacteria. Check coils and thermostat on that refrigerator.
- Warewashing - Mechanical Warewashing Equipment, Wash Solution Temperature
Observation: The wash temperature of the low temperature chemical sanitizing ware wash machine is not meeting the manufacturer's specifications. The minimum temperature is 120ºF and the actual temperature was 117.
Correction: Discontinue the use of the low temperature chemical sanitizing ware wash machine until it is working properly. Initiate manual wash, rinse, and sanitize method to properly clean and sanitize equipment and utensils. To minimize workload you can move to all single service utensils.

Observation: The following equipment food-contact surfaces were observed soiled to sight and touch: interior of the ice machine.
Correction: Clean and sanitize these surfaces for ice contact.
