Observation: Less than 10 foot candles of light was noted in the storage area. Multiple light fixtures not working.
Correction: Provide at least 10 foot candles at a distance of 30 inches from the floor in the walk-in refrigeration units and dry storage areas and in other areas and rooms during periods of cleaning.

Observation: Ceiling of facility is not maintained in good repair. Also the floor & walls in the mop sink area not in good repair.

Observation: Floors under several pieces of equipment noted in need of cleaning.
Correction: All floors, walls, and ceilings must be cleaned as often as necessary to keep them clean. Cleaning of the physical facilities is an important measure in ensuring the protection and sanitary preparation of food. A regular cleaning schedule should be established and followed to maintain the facility in a clean and sanitary manner.

Correction: The presence of insects, rodents, and other pests shall be controlled to minimize their presence on the premises by using methods such as trapping devices or other methods as required. Increase pest control measures.

Observation: Container of degreaser is not properly stored to prevent the contamination of food, equipment, utensils, linens or single service items. Degreaser observed on shelf with food.

Visited facility due to fire in the french fry deep fryer. Check facility for reopening. All food thrown away including condiments. All paper products thrown away. Hot holding trays & condiment trays have been washed & sanitized. Hot holding units have been turned off & cleaned. Grease has been changed in chicken fryers. New fry fryer on order.
