Notes: 1. Staff detected that the chx popper temperature was below 135 F in the hot boxes and pulled all of the product to be reheated without any comment from the health inspector. This was excellent to observe since the chx poppers are kept and cooled down for later use on salads.! 2. Some cheeseburgers were noted holding low, but this product is discarded at the end of each lunch. 3. Sandwiches and salads were prepped at 8 am per the manager and she said they do put the prepared items in the WIC to cool prior to service. The inspector took temperatures right as lunch was starting. Most salads were found under 41 F, but the sandwiches were not. The sandwiches are placed in the very front of the open display cases and are thought to be subject to more temperature abuse. Suggest blast chilling all salads and sandwiches in the WIF and to not stock/open the display case coolers until the last minute. The sandwiches may to be cooled a little longer since they are in the warmest parts of the unit. 4. A dual check valve needs to be installed on the water line connection to the right of the dish machine, where a hose with a sprayer are attached. There is nothing protecting the water line from backpressure or backflow. The inspector had to exit the building for a fire drill during the inspection period.
